I have been so excited to cook with and post about Relay's Seafood by Artisan Cuts. Relay butchers are receiving fresh fish in daily and are even cutting them to order, perfectly filleted and deboned, ready for cooking. As we continue to see early spring vegetables making their return, this week fennel and kale take center stage as main ingredients to this beautiful and rustic frittata. Since these vegetables have a peak fall season and then pop right back up in early spring, they are a go-to in my book during both seasons.
