From September to April, soup is a mainstay in my diet. When the days grow longer and the temperatures rise, though, I find that I have little interest in a bowl of warm vegetables and broth. Recently, I've been lamenting the loss of the ease of making a pot of soup for dinner. There are few other meals so simple and nourishing. Thankfully, tomato season has arrived and brought with it an abundance of juicy, lycopene-packed fruits. Well, I tend to agree — fresh off the vine, nothing quite matches a tomato picked in July; and with tomatoes comes the highly anticipated tomato sandwich.
