In honor of Meatless Monday, here's a delicious tofu recipe from our blogger ambassador, Tim Vidra of E.A.T. Enjoy! Being national soy products month, I wanted to break out of my norm and cook with something that doesn't often make an appearance in my kitchen — tofu. It's not in the regular rotation for no reason other than I simply forget about this ingredient through menu planning.
