Relay (And Friends) Recipes: Stir-Fried Bok Choy with Arugula and Tofu

Being national soy products month, I wanted to break out of my norm and cook with something that doesn't often make an appearance in my kitchen — tofu. It's not in the regular rotation for no reason other than I simply forget about this ingredient through menu planning. Well if that is the case for you as well, I promise it will make a more regular rotation after trying this recipe. The asian flavors brought on in this dish are perfect with bok choy and arugula —both in the height of their season!
